There may be any combination of these particular yeasts found in a SCOBY, but many of them are only found in Kombucha.
When you combine sugar, tea, bacteria and yeast, a SCOBY is created after a certain period of time. As this bacteria and yeast begin to feed off of the sugar that is found in the tea, a rubbery disc will form. This disc will eventually float to the bottom of the tea.
